Green tea is one of the less processed types of tea. The leaves are harvested, dried, and then quickly heated (pan fired or steamed) to prevent too much oxidation which would turn the green leaves brown. The leaves are dried again before consumption. Not all green teas taste the same. It depends not only on the processing method but also on the cultivation practices. Each tea variety embodies its own unique characteristics resulting in different flavors.
